Pate & Cheeses French Bread Vegetable Herb Pie
1/2c uncooked rice 3/4 lb each zucchini & swiss chard 2c fresh peas 1/2c total finely chopped parsley, chopped green pepper, sliced green onions 1sm finely chopped onion 3 cloves garlic minced 1 1/2c shredded Swiss cheese 1 egg, beaten 2T olive oil 1t savory leaves 1/2t each salt, pepper, thyme leaves 1/2lb slice bacon Pastry dough 1 egg yolk beaten with 1t water Place rice in a bowl and add warm water to cover; set aside. Finely chop zucchini. Remove white stalks from chard and chop leaves. In a large bowl, stir together zucchini, chard, peas, parsley, green peppers, green onions, onion, garlic, cheese, egg, oil, savory, salt, pepper and thyme. Cook bacon until lightly brown; remove and drain on paper towel. Add to vegetable mixture. Drain rice in a wire strainer and stir into vegetables. Fit store bought pastry dough in 10 in pie plate. Fill crust with vegetable mixture. Top with second pie crust; fold under and crimp edges. Bake at 400 degrees for approximately one hour. Let cool briefly before slicing.
